One of my favorite "pre" school memories is helping my mom prepare a part of our dinner or dessert once a week. My children LOVE to help me in the kitchen, so incorporating it into our weekly routine has been a huge hit. I'm also hoping that my "sometimes picky" eaters will try some new foods if they've had a hand in making them.
This week we're sharing our favorite fall muffin recipe - so simple it only requires 3 ingredients!
Pumpkin Spice Muffins
1 Box Spice Cake Mix
1 Can Pumpkin (the size of a small soup can)
1 Bag Butterscotch Chips
Preheat oven to 350 degrees. Line muffin tin with cupcake wrappers.
Pour pumpkin in mixing bowl. Slowly add Spice Cake mix to the pumpkin. Mix until ingredients are combined (your mixture will be pretty thick, don't worry, and don't add anything else to it) Mix in half to 3/4 bag of butterscotch chips with spoon.
Scoop mixture into muffin cups. They will not rise very much, so you can fill them right to the top.
Bake for 20 - 30 minutes (exact baking time varies according to how full the muffins are) - I take them out when the tops pop back up when touched.
Cool slightly and devour!!
